Step 2. An animation will begin on your Apple Watch and ask you to scan your watch with your iPhone.
Step 3. Once the Apple Watch is detected and paired the iPhone will display a prompt asking you to make one of the two choices – Restore from Backup & Set Up as New Apple Watch.
Note: If you are pairing a new Apple Watch, then you can set it up as a new Apple Watch, otherwise choose the first option to restore all the data and settings that we had previously backed up in the Prerequisites section.

While I have never experienced a failure with the automatic method of pairing the Apple Watch with a new iPhone, but as per the official forums many face certain issues. Here are the manual steps to pair Apple Watch with new iPhone :
Step 1. Tap the (i) icon that appears on your Apple Watch.
Step 2. This will enable you to identify the name of your watch which will appear on the Apple Watch itself and also appear inside the Watch app installed on your iPhone.
Step 3. Select the name of your Apple Watch on your iPhone and enter a six-digit code that will appear on your Apple Watch to pair them up.
Step 4. In the next step, you will see the same prompt asking you to restore a backup or set up the watch as a new device.
Step 5. Follow the on-screen instructions and this will help you to pair Apple Watch with the new iPhone within a short time.

How to Unpair Apple Watch?
It is important to unpair the Apple Watch before repairing it with your new device or else it will not connect. Here are the steps on how to unpair Apple Watch:
Step 1. Launch the Watch app on your iPhone and tap on the name of your watch.
Step 2. Now, tap on the (i) icon and you will see the option to Unpair Apple Watch.
Step 3. Tap on the ‘Unpair Apple Watch‘ option and select yes if prompted again.
Step 4. Enter your Apple ID password to carry out the unpairing process.
Step 5. Tap on Unpair in the top-right corner of your iPhone screen for the final time.
Step 6. Your Apple Watch will not automatically reset itself to its default settings.
